h3-transform.text-transform\">Instructions<\/h3>\n\t\t\t\t\t<\/div>\n\t\t<div style=\"color: #222 !important;\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t<ol>\n<li id=\"instruction-step-1\">To start the sauce, place the water, cashews, rolled oats, garlic, paprika, and black pepper into a blender, and set aside (so the cashew can soften).<\/li>\n<li id=\"instruction-step-2\">Preheat the oven to 375\u00b0F. Set aside a 2\u00bd quart baking dish (you do not need to oil or use parchment paper).<\/li>\n<li id=\"instruction-step-3\">To thinly slice the onion and potatoes, I recommend a mandoline slicer to get uniform slices, especially of the potato. Thinly slice the onion and place into a small bowl. Slice the peeled potatoes to be \u215b inch or so, and place the stacks on a plate.<\/li>\n<li id=\"instruction-step-4\">To finish the sauce, blend the soaking ingredients until smooth. Add the thyme leaves, and blend just briefly, so you can still see small flecks of thyme.<\/li>\n<li id=\"instruction-step-5\">Assemble the casserole as follows: (1) Pour 2 tablespoons of sauce into the bottom of the dish, tilting the dish to coat evenly. (2) Place \u00bc of the potatoes in the bottom dish, only slightly overlapping them (use the thickest potatoes). Spread \u2153 of the sliced onions over the potatoes. Pour \u00bd cup of the sauce over the top. (3) Add a second and third layer in the same way. (Use any oddly shaped potatoes for the inner layers.) (4) Place the fourth and final layer of potatoes on top (save the nicest looking potatoes for the top), layering in the same way, or cutting the potatoes in half lengthwise (as shown below) for a nice design. Pour the remaining sauce (will be about 1 cup) evenly across the top.<\/li>\n<li id=\"instruction-step-6\">Cover (see Notes) and bake for 45 minutes. Remove the cover, and pierce the potatoes with a knife. They should be tender but not falling apart (if they\u2019re still pretty hard, you may want to bake another 5 to 10 minutes), and bake uncovered for another 10 minutes to cook down some of the remaining liquid.<\/li>\n<li id=\"instruction-step-7\">If you\u2019d like a browned top, set the oven to broil, and bake for 3 to 5 minutes, watching <strong>carefully <\/strong>that it does not burn. Or you may use foil, or Reynold's \"Pan Lining Paper,\" which has foil on one side and parchment on the other (you'd place the parchment toward the food).<\/p>\n<p><strong>Potatoes: <\/strong>Waxy potatoes, like Yukon gold and red, work best for this type of recipe so that they\u2019ll hold their shape after the long baking period. You could use Russets in a pinch, but check for doneness earlier in baking, so they don\u2019t get too mushy and overdone. Ideally, you want the potatoes to retain their shape and layers while still being tender.<\/p>\n<p><strong>Cashews: <\/strong>This dish really needs some creamy richness (to replace traditional butter and cheese), and the cashews are perfect for this; and the fat helps hold the layers together (along with the bit of oats). If you don\u2019t eat cashews, you can try another nut or seed, although I have not experimented beyond cashews. Sometimes I recommend replacing white beans for cashews in salad dressings, but I don\u2019t think that would work here. If you find an alternative that works well, please leave a comment below.<\/p>\n<p><strong>Oats:<\/strong> I used the 1 tablespoon of oats to help thicken the sauce; but any kind of flour would work.<\/p>\n<p><strong>Herbs:<\/strong> I like thyme in this, but I think fresh rosemary would be great too. A little sage would also be nice. If you don't have fresh herbs on hand, use a tablespoon of dried Italian seasoning blend.<\/p>\n<p><strong>Mandoline: <\/strong>This recipe is the perfect dish for using a mandoline, which is a very sharp and precise slicer made for uniformly cutting vegetables of all types. For this recipe you want the potatoes the same thickness so they bake evenly. If you don\u2019t\u2019 have a mandoline, you could use a sharp 8-inch chef\u2019s knife, but be very <strong>careful <\/strong>not to cut your hand when slicing.<\/p>\n<p><strong>Baking dish: <\/strong>My favorite glass dish for this recipe is 2.5 quarts. If you use another dish close in size, that is fine.
