With the potatoes are layers of mushrooms, onions, chard, and fresh basil. I have used\u00a0Yukon golds, too, but they a require longer cooking time, thus overcooking\u00a0the other vegetables a bit. This dish has multiple steps and takes a bit of preparation, but the final result\u00a0is worth it. I suggest reading the entire recipe through once first before starting. This makes excellent leftovers! You can reheat them in a microwave, or put a portion or two in a nonstick pan with a little water in the bottom and on the underside of the lid, and heat covered on medium-low until heated If you do not have a mandolin, use a chef\u2019s knife and aim for about a \u215b-inch thickness. Place the sliced potatoes, onions, mushrooms, and chopped chard\/spinach and basil each into their own bowls.<\/li>\n<li id=\"instruction-step-3\">Preheat the oven to 375\u00b0F. Set aside a 13\u00d79-inch baking dish (you do not need to oil or use parchment paper).<\/li>\n<li id=\"instruction-step-4\">Blend the sauce thoroughly until smooth. Next, we will prepare the casserole by creating layers as follows in steps 5 through 9:<\/li>\n<li id=\"instruction-step-5\">Pour a thin layer of sauce into the dish so it coats the bottom evenly.<\/li>\n<li id=\"instruction-step-6\">Layer one-third of the potatoes across the bottom of the pan, only slightly overlapping them. Use the thickest and biggest potatoes on the bottom.<\/li>\n<li id=\"instruction-step-7\">Next, add half of the onions, half of the mushrooms, half of the basil, and half of the chard\/spinach. Pour about half of the remaining sauce over this.<\/li>\n<li id=\"instruction-step-8\">Next, add another layer, starting with a layer of potatoes (use the smaller and any odd looking potatoes for this layer), followed by the remaining onions, mushrooms, basil, and chard\/spinach.<\/li>\n<li id=\"instruction-step-9\">Now, finish the casserole with a final layer of potatoes, creating a nice-looking \u201croof\u201d to your casserole. Pour the remaining sauce evenly over the top.<\/li>\n<li id=\"instruction-step-10\">Cover the dish with a glass lid (if it has one) or aluminum foil (make sure the foil doesn\u2019t touch the food, and seal the edges). Bake for 30 minutes.<\/li>\n<li id=\"instruction-step-11\">Remove the foil (careful of the hot steam). Using a rotary cheese grater to create a cheese-like topping, grate the \u00bc cup cashews evenly across the top, and cook uncovered for 5 minutes more, or until the potatoes are tender when pierced with a knife and the edges are lightly browned. Let stand for 5 minutes before serving.<\/li>\n<\/ol>\n\t\t<\/div>\n\t<\/div>\n\t\n\t\n\t\t\n\t\n\t\t\t<div class=\"tasty-recipes-notes\" style=\"background-color: #E1E1E1 !important;\" data-tasty-recipes-customization=\"secondary-color.background-color\">\n\t\t\t<h3 style=\"color: #222 !important; text-transform: uppercase !important;\" data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Notes<\/h3>\n\t\t\t<div class=\"tasty-recipes-notes-body\" style=\"color: #222 !important;\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t\t<p><strong>For a lower-calorie dish<\/strong>, in the sauce use 1 cup water and 1 cup nondairy milk, and\/or decrease the amount of cashews from \u00bd cup to \u00bc cup. You can also omit or reduce the grated cashews on top.<\/p>\n<p><strong>If you have a high-sided (deep-dish) 9x13 casserole dish<\/strong>, this would be a great use for it.
